It takes a man to grill. While it is certainly true, some “men” actually think of it as play. Or chest thumping, and maybe a little of “I’m a man and I can start a fire”, or somewhere our genes dictate that men build fires and cook. Well, it certainly has changed but the basic curiosity between man and fire remains the same.

So how to use the charcoal grill properly. It’s pretty straightforward really. Once the coals are hotenough, put the grate over, wait for it to heat up. Brush a small amount of oil so that the meat you’re about to grill won’t stick to the grilling surface. Then it’s just a matter of grilling to your delight. Davao Barbeque is exactly done this way. Over red hot coals and watching for the right moment your food is done. Just enough and never overcooked.

How you want your meat will depend on how long it stays on the grill. The longer over the fire, the more thoroughly it gets cooked. So say for example you’re cooking steak, you’d want it on the grill for only a couple of minutes. About 3 minutes per side if you want it done medium. More for well done, and a little less if you want it medium rare. If you want a good sear and medium rare, turn up to heat a little.

Grilling pork is similar but takes longer grill time. Davao barbeque dictates that you need to have it thoroughly cooked to kill bacteria and other harmful elements found in the meat. So marinate, grill and flip the meat occasionally to avoid it getting burnt. As an added tip, if you’re grilling pork belly, when the meat is done cooking, try putting the pork vertically on the grill with the skin side down. After a couple of minutes, this gives it a delicious crunch when eaten.
